Black Beans and Rice

Hands-on: 10 minutes
Total: 25 min. Serves: 4

-2 Tbsp vegetable oil
-1 onion, chopped
-2 bell peppers, chopped
-1 tsp chili powder
-salt and pepper
-1/2 cup long -grain white rice
-1 (14 oz. )can black beans, drained and rinsed
-1 1/4 cup water

1. Heat oil over medium-high. Add onion and peppers. Saute until soft, 6-7 minutes. Stir in chili powder and season with salt and pepper; cook 1 minute more.
2. Stir in rice, add beans, and wover with water. Boil.
3. Cover; simmmer 12-15 minutes.
4. Remove from heat; let stand 5 minutes, covered.
5. Fluff; serve with sour cream and green onions, if desired.
